Of Rome’s four classic pastas, amatriciana is the one with tomato. Guanciale flavours the sauce and pecorino finishes the dish. At La Lupa it comes with bucatini, a long hollow pasta that catches the sauce inside too.

It is also one of the two pasta choices in the €30 La Lupa set menu, alongside rigatoni alla carbonara.

À la carte, amatriciana sits with the other pastas: carbonara, cacio e pepe, gricia, porcini fettuccine and the seafood dishes. With the set menu, bruschetta comes first, then the pasta and a main, saltimbocca or lamb, with potatoes and the dessert of the day.
