Rome’s main course.

Saltimbocca alla romana is a thin slice of veal with a sage leaf and a slice of prosciutto, cooked in a pan in a few minutes. Together with grilled lamb chops it is one of the most classic Roman mains: simple meat, the scent of sage and pan juices to mop up with bread.

At La Lupa it is on the menu and one of the two main-course choices in the €30-per-person La Lupa menu, served with potatoes.

Saltimbocca, lamb or meatballs.

Other Roman mains on the menu are abbacchio a scottadito, with lamb, rosemary and potatoes, and polpette al sugo, meatballs in tomato sauce from home cooking. Before that, a Roman pasta: amatriciana or carbonara are the set-menu choices.
