Supplì classico
Rice · ragù · mozzarella
Break it open and the mozzarella stretches like an old telephone cord: that is the supplì, Rome’s fried rice ball with ragù and mozzarella. At La Lupa it starts the meal, steps from Termini.

A supplì is rice cooked in ragù with a mozzarella heart, breaded and fried. Romans also call it “supplì al telefono” because of the string of mozzarella that stretches when you pull it apart. You find it in pizzerias, in takeaway shops and, at the restaurant, as a starter before the pasta.
La Lupa’s menu has the classic supplì: rice, ragù and mozzarella.
Next to the supplì you will find tomato bruschetta and fried courgette flowers with mozzarella and anchovies. A starter to share and then a pasta, such as carbonara or gricia: the simplest Roman meal there is.
